One of Sonoma County’s newest artisanal creameries, Bohemian Creamery is pleased to offer a variety of Italian-style cheeses fashioned on a beautiful forty-acre farm in the hills looking out on the mountains of the Mayacama range. Our milk comes from our own goats as well as from animals on nearby farms. We use vegetarian rennet and individually tend to and care for each handcrafted round in true, artisanal tradition.

Capriago is an Asiago-style cheese made from our goat milk and aged between 8 and 10 weeks. The rind is washed with brine at the beginning of the aging process, promoting a moist and slightly sweet paste that is well-paired with fruit or seasonal greens and nicely complements the spicy aromas of many of Sonoma County's Pinot wines.
Average weight: 3.5 pounds per wheel.

Boho Belle is made with organic Jersey cow milk in the Bel Paese tradition. Each wheel is aged 6-8 weeks to allow for the natural development of geotrichum, a thin layer of white mold that enhances the vanilla flavors of this particular cheese and helps maintain its deep yellow rind. A semi-soft paste, Boho Bel is the perfect finish to any dessert. Its creamy texture and subtle finish go nicely with the bolder wine and can be enjoyed before, during, or after any meal.

Caproncino, a tangy, semi-hard goat cheese is ideally paired with salads or fresh fruit compotes. Aged three months, this cheese is pressed into small wheels, promoting a lovely texture that endures but does not overwhelm.

Bo Poisse, based on an Epoisse recipe, blends the salty and sweet in a delicious taste medley, offering up the pungency of a washed rind cheese with the smoothness of a triple cream.
Average weight: 0.75 pounds per wheel. Available October-May.

Bo Peep is a soft, tangy sheep and cow milk blended cheese, ripened in its own bloomy blanket. It has a creamy richness that remains more subtle, even with age, than a washed rind variety cheese.

Holy Molé is a fresh sheep-cow blend, robiola style cheese with a sour- salty paste enhanced by a layer of cacao nibs and spices pressed into the rind for a earthy, sweet-sour combination .

Bovoncino, fashioned in the style of an asiago stagionato, is an organic jersey cow milk cheese aged from 8-10 months for a deep, rich buttery flavor. Its semi-hard to hard paste is terrific for shaving as well as a perfect stand-alone addition to any cheese plate.
Average weight: 1.5 lb per wheel

Romeo is our longest-aged and largest cheese. Each wheel remains in our aging rooms for a minimum of 8 months where it acquires intensely buttery flavors similar to a Pecorino or Grand Padana. Romeo can be served on a cheese plate or grated onto pasta or vegetables.

BoDacious is a fresh goat's milk cheese encased in a candidum mold to keep the paste tangy and soft. Perfect with bread and summer salads.
Average weight: .5 pounds per wheel. Available March-October.

Cowabunga is a soft, spreadable lactic cow's milk cheese stuffed with a delicious sweet cajeta (goat milk caramel) surprise, and sealed in a mild bloomy geotrichum rind. Made in the winter months when our goat milk is in preciously low supply, Cowabunga offers a sweet desserty richness to any cheese plate.
